“The land on which the vines grow is of fundamental importance to the result I want to achieve. No herbicide or desiccant, only organic fertilizers: the environmental impact is minimal.

Stripping, thinning, harvesting and pruning are strictly manual. The grapes are handly harvested from September to October, placed in boxes of 4 kg or plateaus of 80 x 120 cm. Rootstock yields per vine vary from cultivar to cultivar, into a very low range.”
