“The land on which the vines grow is of fundamental importance to the result I want to achieve. For the older vineyards, the density is 4200 plants/hectare. The most recentones have a density of 5800 plants/hectare. No herbicide or desiccant, only organic fertilizers: the environmental impact is minimal.

Stripping, thinning, harvesting and pruning are strictly manual. The grapes are harvested from about mid-September to 20 October, placed in boxes of 4 kg or plateaus of 80 x 120 cm. Rootstock Yields per vine vary from cultivar to cultivar: from 600g to 2kg, whereas yields per hectare range from 3-5 tons.”
